Chocolate Chip Banana Bread

Whether you're having this for breakfast or a snack or dessert, this banana bread will always satisfy. The fiber supplement is totally optional and has little to no effect on the taste buds.

  • 3 ripe bananas
  • 6 tbsp. butter melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs beaten
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1-1/2 cups all purpose flour
  • 2 tbsp. Meta Mucil or equivalent optional
  • 1/2 cup chocolate chips


  1. Preheat oven to 350° F. Mash the bananas in a medium sized mixing bowl. Then stir in the melted butter.

  2. Next, whisk in the sugars, eggs, vanilla, baking soda, flour, and fiber supplement.

  3. Gently stir in most of the chocolate chips, reserving some for topping.

  4. Fold the mixture into a 9x5 loaf pan and top with the remaining chocolate chips. Bake in preheated oven for 45 to 55 minutes or until the tooth pick test comes out clean. Let cool for an hour or so and serve warm or at room temperature.
