Cranberry Walnut Chocolate Chip Cookies

  • 2 1/4 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3/4 cup all vegetable shortening Crisco butter flavor
  • 3/4 cup light brown sugar packed
  • 3/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 1 cup white chocolate baking chips
  • 1 cup semi-sweet chocolate chips
  • 1 cup dried cranberries
  • 1 cup chopped walnuts


  1. Preheat oven to 375°F.  In a medium bowl mix the flour, baking soda, and salt together

  2. In a second bowl beat together the shortening, both sugars, and vanilla extract.  Add the eggs one at a time and beat until well blended.  Gradually add the flour mixture and beat until it all mixes together.

  3. Gently turn the chips, cranberries and, walnuts into the cookie dough using a large spoon.  Do not use the blender for this.  Line 2 large cookie sheets with parchment paper.  Using a tablespoon or 2 oz. ice cream scoop drop the dough onto the sheets approx. 2 inches apart.  Bake for 12 to 14 minutes or until golden brown.

Did you know:  In the 17th century women would often put a piece of cake under their pillow in order to dream of their future spouses.  Maybe if they slept on these cookies they could have avoided some nightmares.
