Tip of the day: Hide these from the “Cookie Monster”
Cranberry Walnut Chocolate Chip Cookies
- 2 1/4 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 3/4 cup all vegetable shortening Crisco butter flavor
- 3/4 cup light brown sugar packed
- 3/4 cup granulated sugar
- 1 tsp. vanilla extract
- 2 large eggs
- 1 cup white chocolate baking chips
- 1 cup semi-sweet chocolate chips
- 1 cup dried cranberries
- 1 cup chopped walnuts
Preheat oven to 375°F. In a medium bowl mix the flour, baking soda, and salt together
In a second bowl beat together the shortening, both sugars, and vanilla extract. Add the eggs one at a time and beat until well blended. Gradually add the flour mixture and beat until it all mixes together.
Gently turn the chips, cranberries and, walnuts into the cookie dough using a large spoon. Do not use the blender for this. Line 2 large cookie sheets with parchment paper. Using a tablespoon or 2 oz. ice cream scoop drop the dough onto the sheets approx. 2 inches apart. Bake for 12 to 14 minutes or until golden brown.
