Easy Key Lime Pie

Here's a key lime pie recipe that's so easy to make you'll want to make it again and again. And your guests/family will thank you for it.

The Crust

  • 9 graham crackers about a cup and a 1/4
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 6 tbsp. butter melted

The Filling

  • 5 large egg yolks
  • 2 14 oz. tins sweetened condensed milk
  • 1/2 cup key lime juice use regular lime juice if the key lime is not available
  • 1 tsp. lime zest


The Crust

  1. Preheat oven to 300°F.  Place the graham crackers in a resealable freezer bag and using a rolling pin, or your hand, reduce them down to fine crumbs.

  2. Combine the crumbs, salt, cinnamon, and melted butter.  A regular dinner fork works well for this.

  3. Pour the graham cracker mixture into a greased 9 inch pie plate and press into the bottom and up the sides forming the pie shell.  Bake for 10 minutes, remove from oven and let cool slightly.

The Filling

  1. In a large bowl whisk the egg yolks until smooth.  Add the condensed milk, lime juice and zest and whisk together until well blended.  Pour the mixture into the prepared graham cracker crust and bake for 25 minutes.  Let the pie cool to room temperature (about a half hour) and then refrigerate for 2 hours.  Serve the key lime pie chilled with a dollop of whipped cream.

Did you know:  On July 6th 2006, both The Florida House Of Representatives and Florida Senate passed legislation selecting "Key Lime Pie" as the official pie of the state of Florida.  Wow, and I thought I moved here just for the weather.
