Oatmeal Raisin Chocolate Chip Cookies
- 3/4 cup butter softened
- 3/4 cup sugar granulated
- 3/4 cup brown sugar firmly packed
- 2 large eggs
- 1 1/2 tsp. vanilla extract
- 1 tsp. baking soda
- 1 cup rolled oats uncooked
- 3/4 tsp. salt
- 1 12 oz. package semi sweet chocolate chips
- 1 cup raisins plumped in hot water if too dry
Using an electric mixer on med. beat butter and sugars until creamy. Add vanilla and eggs, continue beating until blended.
In a second bowl combine the flour, soda, oats and salt. Now gradually add this to the butter mixture and stir in the chocolate and raisins.
Using a 2 tbsp. scoop drop onto a lightly greased cookie sheet (or parchment paper as shown). Bake in 350 degree preheated oven for 8 to 14 minutes depending on how much doneness you prefer.
