These should be called “The Best Cookies”.
Stella's Good Cookies
- 1/4 cup granulated sugar 1/2
- 1/4 cup brown sugar
- 1/2 cup butter softened
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 tsp. cream of tartar
- 1/4 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. vanilla
- 1/2 cup Rice Krispies crushed
- 1/2 cup coconut shredded
- 1/2 cup quick cooking oats
- 1 3/4 cups all purpose flour
Preheat oven to 350°F. In a large bowl mix the two sugars together.
One by one add each of the remaining ingredients to the sugar. Mix/blend after each ingredient is added.
Spray a large cookie sheet with cooking spray or line the sheet with parchment paper. Roll the cookie dough into balls (1 tbsp. each) and drop onto the cookie sheet with enough space between them for expansion. Use your thumb or a teaspoon to make a dent in each one.
Spoon 1 tsp. of your favorite jam or jelly into the dent of each cookie. I used red raspberry jam today. Bake for 12 to 15 minutes. Let the cookies cool after baking.
My mother adapted this cookie recipe from the original 100 good cookies recipe. Stella is now 90 years old and still cooking and baking. You never know when one of 14 great grand children might drop by.
