Triple Chocolate Cookies
Chocolate, chocolate, chocolate... For chocolate lovers this is the ultimate comfort food.
- 2-1/2 sticks butter, softened (a little more than 1/2 pound)
- 1-1/2 cups granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tbsp. vanilla extract
- 2-1/4 cups all purpose flour
- 3/4 cup cocoa powder unsweetened
- 1/2 tbsp. baking soda
- 1 teaspoon salt
- 1 cup chocolate chips semi-sweet
- 1 cup white chocolate chips
Preheat oven to 350°F. In a large bowl blend together the butter and sugars until creamed. Blend in the eggs one at a time and then mix in the vanilla until well blended.
In a medium sized bowl whisk together the flour, cocoa powder, baking soda, and salt.
Add the flour mixture a little at a time to the butter mixture blending as you go. Finally, gently mix in the the chocolate chips.
Prepare your baking sheets with parchment paper. Drop the cookie dough in 1-1/4 tbsp. balls onto the parchment paper approx. 2 inches apart. If you like you can dot the tops of the cookie balls with 2 or 3 extra chocolate chips to make them show better. Bake in preheated oven for 10 to 12 minutes. Then let cool before serving.
