Turn that regular chicken breast into a regular feast!
Chicken Breast Stuffed With Bacon and Feta
- 1/4 cup olive oil extra virgin or extra light
- 3/4 tsp. Italian seasoning or use half each of oregano and basil
- 1 clove garlic minced
- salt and pepper to taste
- 2 medium sized chicken breasts boneless skinless
- 4 slices cooked bacon crumbled
- 4 oz. crumbled feta cheese
- 1/2 tsp. Italian seasoning
In a small bowl mix the oil, seasonings and minced garlic together and set aside.
Preheat oven to 375° F. In a second bowl mix together the crumbled bacon, crumbled feta and Italian seasoning.
Fillet the chicken breasts and place them in a greased casserole dish. If you have never filleted a chicken breast before please google it and make sure you use a good sharp knife.
Use about 2/3 of the bacon feta mixture to stuff the 2 pieces of chicken. Fold them over and press around the edges to seal them. Top of the chicken breasts with remaining feta and bacon. Finally pour the baste evenly over the chicken.
Bake the chicken for 35 to 40 minutes or until the juices run clear. If you have a meat thermometer they should read 165°F. Enjoy.
