Here’s a quick fix for chicken that doesn’t get any simpler.
Herb Crusted Chicken Breasts
- 2 chicken breasts boneless, skinless
- 1 tbsp. olive oil extra light
- 2 tbsp. dried parsley flakes
- 1/4 tsp. kosher salt
- 1/4 tsp. dried basil
- 1/4 tsp. garlic powder
- 1/2 tsp. Italian seasoning
Preheat oven to 400°F. Wash and towel dry the chicken breasts. Brush both sides of the chicken with the olive oil. Mix the rest of the ingredients in a small bowl. Sprinkle the mixture evenly over the chicken and lightly press into the meat on both sides. Bake for 35 to 40 minutes until juices run clear.
These chicken breasts go with almost any veggie or side and especially with a nice crisp caesar salad.
