Jalapeño Popper Stuffed Chicken Breasts

Jalapeño Popper Stuffed Chicken Breasts

  • 2 fresh jalapeño peppers
  • 2 boneless skinless chicken breasts about a pound
  • pinch garlic powder
  • salt and pepper to taste
  • 2 oz. Colby/Jack cheese
  • 4 slices bacon


  1. Preheat oven to 350° F.  Slice the 2 peppers lengthwise.  Use a spoon to scrape the inside of the peppers in order to remove all the seeds etc.

  2. Filet the chicken breasts open.  Lightly sprinkle the open chicken breasts with the garlic powder and salt and pepper.  Cut the cheese to fit inside the sliced peppers.

  3. Close the peppers around the cheese.  Then fold the filleted chicken breasts around the jalapeno peppers.  Bacon wrap the chicken breasts to keep them closed around the peppers and cheese. 

  4. Place the bacon wrapped chicken breasts in a greased casserole dish and bake for 50 to 60 minutes until juices run clear.  Serve with your favorite salad and enjoy.
