Kansas City Style Back Ribs

These ribs will never “rub” you the wrong way.

Kansas City Style Back Ribs

  • 1 rack baby back ribs about 3 pounds
  • 1/4 cup brown sugar
  • 1 tbsp. paprika
  • 1 tsp. salt kosher preferred
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. ground mustard
  • 1 tsp. ground red pepper (cayenne)
  • 1/4 cup your favorite bbq sauce.


  1. Preheat oven to 275° F.  Place all of the ingredients (except the ribs and the bbq sauce) in a medium sized mixing bowl.

  2. Use a whisk or fork to blend all the sugar and spices together.  Your rub is now ready for the ribs.  Set aside.

  3. Prepare the ribs by removing the membrane/silver skin.  Have a look at this youtube video from BBQ Pit Boys for the easiest way to do this. 

  4. Spread the rub evenly over both sides of the ribs.  Now, using your fingers gently press the rub into the meat.  Wrap the ribs in foil and bake in a preheated oven for 2 1/2 hours.

  5. When the ribs are cooked, you can serve them right away or brown them up a little extra on the grill.

  6. You can also (and this is my preferred method) finish them off on the grill with your favorite bbq sauce.  Either way they are fall off the bone tender and delicious.

Try serving these KC Ribs with some red potatoes in foil.  Simply Delicious.

Did you know:  Nobody is 100% sure where BBQ came from.  Some people think the Spanish brought it over (since "barbacoa" is a similar style).  Others think the French brought it from their Caribbean colonies.  It's hard to tell, but we're glad it's here.
