Sweet Tequila Lime Chicken
Grilled chicken breasts always taste better when marinaded, and this gives them a little tartness and just enough sweetness to please most everyone.
- 3 boneless/skinless chicken breasts about a pound and a half
- 1/2 cup tequila
- 3 cloves garlic minced
- 1/4 cup lime juice
- 1/2 cup brown sugar
- 1 tsp. kosher salt
- 1/2 tsp. dried thyme
- zest of 1 lime
Place the chicken breasts in resealable freezer bag or glass dish. Mix all the rest of the ingredients together in a medium sized mixing bowl.
Pour the marinade over the chicken breasts, seal the bag, and swoosh around until all the chicken is well coated. Place the chicken in the refrigerator for a minimum of 4 hours or overnight if possible. Flip the bag over several times during the marinading.
Prepare grill to medium heat. Grill the chicken breasts for 7 to 8 minutes per side, just until juices run clear. Remove from grill and serve right away with your favorite salad or vegetable.
Did you know: Tequila drinkers in Mexico typically sip their drink. A common practice in the U.S. is to take a shot with lime and salt, known as tequila cruda, while those in Mexico opt to savor their tequila neat like whiskey. Personally I prefer to cook with mine, thank-you very much.
