Keep it shrimple smart, just like our motto!
- 6 oz. linguini
- 1/2 lb. medium sized shrimp peeled, deveined, tail off
- 1 green pepper sliced
- 1 red pepper sliced
- 1 med. carrot cut into matchsticks
- 4 tbsp. butter (1/2 stick)
- 2 cloves garlic crushed
- 2 tbsp. Italian parsley chopped
- salt and pepper to taste
- 1/4 cup grated parmesan cheese
Cook the linguini al dente per the package instructions.
Microwave the peppers and carrots for 1 1/2 minutes on high. Stir and cook another 1 minute. Set aside.
Melt the butter in a 12 inch skillet, add the crushed garlic and half the chopped parsley. Cook on medium heat for 1 minute. Add the shrimp and simmer until shrimp are cooked approx. 10 minutes, stirring often.
Stir in the warm peppers and carrots and cook for another minute, stirring often.
Drain the linguini, and add it to the pan. Toss everything together. Now sprinkle in the parmesan cheese, tossing continuously until all the butter in absorbed. Reduce heat as the mixture thickens 1 to 2 minutes.
Garnish with the chopped parsley and serve with a warm slice of garlic bread.
