Colorful and tasty side dish.
Baked Curried Carrots
- 4 medium sized carrots peeled and sliced
- 1 tbsp. butter
- pinch curry powder
- salt and pepper to taste
Preheat oven to 350° F. Peel and cut carrots lengthwise into 2 or 3 inch pieces.
Melt butter in casserole or pie plate. Add carrots and toss to coat them evenly. Sprinkle with the curry powder and salt and pepper. Bake uncovered for 35 minutes or until they are done but not too soft.
Good side that goes with most meat dishes, especially pork and chicken.
