Baked Mediterranean Rice

Great side dish for most any meal, especially kabobs.

Baked Mediterranean Rice

Ingredients

  • 3/4 cup long grain rice uncooked
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/8 tsp. tumeric just a pinch is all you need
  • 1 cup chicken stock
  • 3/4 cup water
  • 1 clove garlic chopped fine
  • 1/2 yellow onion chopped
  • 2 tbsp. fresh parsley chopped
  • 1 1/2 tbsp. oliveoil extra virgin

Instructions

  1. Preheat oven to 375°F.  I like to start this recipe off by adding the spices to the rice first in a measuring cup.

  2. Next, combine all the ingredients in a 1.5 qt. casserole dish and give it a stir.  Cover and bake in preheated oven for a total of 40 to 45 minutes.  It's a good ideal to give the rice a stir after about 25 minutes.  This way everything stays mixed together well.  That's it, fluff the rice up with a fork and you're ready to serve.

This Mediterranean rice goes well with most all meals especially kabobs.

Did you know:  Rice is the oldest known food that is still widely consumed today.  Archaeologists can date it's consumption back to 5000 BC.  Also, just in case you were wondering, April 19th is National Rice Ball Day.
