Chicken Caesar Salad

About as simple and smart as you can get!

Chicken Caesar Salad

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 2 people

  • 1 large chicken breast grilled
  • 1 head heart of romaine cut up
  • 1/4 cup croutons
  • 1 tbsp. bacon bits
  • 1 tbsp. grated parmesan
  • salt and fresh ground pepper to taste
  • 6 oz. caesar dressing Marie's

  1. Let's be perfectly honest here.  There are literally thousands of variations out there of the classic caesar dressing, and in my opinion it's hard to beat ready made Marie's.  After all, this blog is really about "K.I.S.S."

  2. So with that in mind lets get to work.  Slice the chicken breast into strips.

  3. Toss the remaining ingredients together in a large bowl.

  4. If the sliced chicken is cold you need to microwave it on medium for 1 minute.  Portion the salad onto 2 plates.  Arrange the warm chicken on top of the salad.  Serve with a piece of warm garlic bread.

Recipe Notes

Did you Know:  In 1998 California banned the Caesar Salad as we know it because of raw egg in the dressing.  Good thing there's term limits.  Just some more politicians with egg on their faces instead of in the law books.
