Hasselback Baked Potatoes

Have a little fun with your potatoes Hasselback style.

Hasselback Baked Potatoes

  • 2 medium sized potatoes Russet or Yukon gold
  • 4 tbsp. butter melted
  • salt to taste
  • 1/2 tbsp. grated parmesan cheese
  • 1/2 tsp. snipped chives


  1. Preheat oven to 400°F.  Wash and pat dry the potatoes.  If the potatoes don't want to lie flat you can slice a bit off the underside before slicing them crosswise.  Place potato between two wooden spoon handles and slice them at approx. 1/4 inch intervals to within a 1/4 inch of the bottom.

  2. Butter up a pie plate and place the potatoes in the plate sliced side up.  Brush them generously with about half of the melted butter and give them a sprinkle of salt.  Bake the potatoes for 45 minutes.

  3. Remove the partially cooked potatoes from the oven and brush them with the remaining melted butter and try to get in between the slices.  Sprinkle with the grated parmesan cheese and return them to the oven.  Bake for another 20 to 25 minutes.  Remove from oven and garnish the top with the snipped chives.

Recipe Notes

This recipe originated in Stockholm Sweden at a restaurant named Hasselbacken.  It's a nice alternative to your regular baked potato.  Try it with a Whiskey Grilled Steak.

Did you know:  Potatoes were the first vegetable grown in outer space.  Hasselback baked potatoes are definitely out of this world.
