Simple side dish for chicken or fish.
Lime Thyme Rice
- 3/4 cup long grain rice
- 1 1/2 cups chicken broth
- 1/2 tsp. lime zest
- 1 tbsp. butter
- 2 tbsp. fresh thyme chopped finely or 1 tbsp. dry
Bring the chicken broth to a boil in a medium sized sauce pan. Add the rice, stir and reduce heat. Simmer for 20 minutes or until all the broth is absorbed.
Remove from heat and stir in the butter. Add lime zest and thyme. Stir and serve warm.
