Red Potatoes In Foil

  • 1 1/2 lbs. small red potatoes sliced
  • 1 large yellow onion sliced
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dry dillweed
  • 1/2 tsp. dried chives
  • 3 tbsp. butter


  1. Lay out a large piece of no stick aluminum foil on the counter.  Place half of the sliced potatoes on the foil and top with the onion slices.  Cut the butter into 4 portions and place on top.  Sprinkle 1/2 of the garlic powder, dillweed, and chives evenly over the top.

  2. Place the rest of the potatoes on top and sprinkle the rest of the garlic powder, dillweed, and chives.  Cover with another large piece of aluminum foil and seal all the edges. 

  3. Bake in a preheated 375° oven for 15 minutes.  Turn over and bake another 15 minutes.  Or, as I prefer, cook on low  on a gas grill with the lid closed.  When done transfer the potatoes to a serving dish and sprinkle some more chives on top.

These potatoes make a good side for almost any entree and they're actually good for you.

Did you know:  Potatoes were the first vegetable grown in space.  I guess that makes them "out of this world".
