A Creamy Tasty Side dish.
- 4 medium sized potatoes sliced yukon gold etc.
- 1 medium yellow onion sliced
- 2 tbsp. fresh green onions sliced or 1 tbsp. dried snipped chives
- 2 tbsp. all purpose flour
- 2 tbsp. butter
- 1/4 tsp. paprika
- 1/2 tsp. kosher salt
- 1/4 tsp. ground black pepper
- 1 cup milk whole or 2%
Preheat oven to 350°F. In a greased medium casserole dish layer half the potatoes and onions and green onions. Sprinkle with half the paprika, salt and pepper.
Divide the butter into 4 pats and place on top of the potato mixture.
Layer the rest of the potatoes and onions on top. sprinkle the rest of the paprika, salt, pepper, and flour over the potatoes. Slowly pour the milk evenly over the potato mixture. Cover and bake in lower portion of the oven for 50 minutes. Remove cover and bake another 10 minutes or until the top is nicely browned.
Scalloped potatoes are a natural for baked ham dishes. They also go nicely with most chicken recipes as well.
