Blackened Mahi Mahi

For the mahi mahi

  • 2 6 oz. pieces of mahi mahi skin off
  • 3 tbsp. butter melted
  • Old Bay Seasoning
  • 1 lemon quartered


  • 1/2 cup long grain rice
  • 1/2 tsp. salt
  • pinch turmeric


  • 1 large zucchini sliced into 3/4 inch pieces
  • 1 tbsp. butter
  • kosher salt
  • dried oregano



  1. Prepare rice per package instructions with the addition of the salt and turmeric.

The Mahi Mahi

  1. While the rice is cooking melt butter in a skillet or microwave.  Dip the fish (both sides) in the butter and place them on waxed paper.  Sprinkle both sides generously with Old Bay Seasoning.

  2. Heat a pan (preferably cast iron) to medium high heat.  I prefer to use the side burner on my gas grill for this.  Place the fish on the hot pan and cook for 5 minutes on each side.  When the fish is cooked squeeze fresh lemon over each piece (1/4 lemon each). 


  1. While the fish is cooking. sprinkle the zucchini slices with kosher salt and oregano.  Add butter to a medium pan and fry the zucchini approx, 3 minutes per side. 

Recipe Notes

Serve the mahi mahi on a bed of rice garnished with the lemon.

Did you know:  Mahi Mahi is the Hawaiian name for dolphin, dolphin fish that is.  Don't worry flipper is still safe.
