Easy Spanish Rice

Nice side dish that’s real easy to prepare.

Easy Spanish Rice

  • 3/4 cup long grain rice uncooked
  • 1/2 tsp. chili powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground cumin
  • 1 can petite diced tomato 14.5 oz.
  • 1 1/4 cup chicken stock
  • 1 tbsp. olive oil extra virgin
  • chopped parsley for garnish


  1. Preheat oven to 375° F.  Measure out the rice.  Add the chili powder, oregano, garlic powder, and ground cumin.  Set aside.

  2. Pour the chicken stock into a 1.5 qt. casserole dish along with the diced tomato.  Add the olive oil and give it a quick stir.  Now stir in the rice and spices.  Cover and bake for 40 to 45 minutes, just until all the liquid is absorbed.  It's also a good idea to give it a stir after 25 minutes in the oven, to make sure it is well mixed together.  That's it your rice side is ready to serve.

Did you know:  When leaving the wedding ceremony, and after the blessing of the bride and groom, it is traditional in all cultures to throw grains of rice over the heads of the newlyweds in order to wish them prosperity and fertility in the future.  So next time you attend a wedding, don't forget the rice, uncooked that is.
