Great rub for back ribs, side ribs, or St Louis style.
Sweet Rub Back Ribs
- 1 1/2 lbs. pork back ribs 1/2 rack, the meatier the better
- 3 tbsp. brown sugar
- 1 tsp. Montreal steak spice
- 1/4 tsp. kosher salt
- 1/4 tsp. paprika
- 1/8 tsp. garlic powder
- your favorite BBQ sauce
Preheat oven to 325° F. To make the rub place all the ingredients except the ribs in a small mixing bowl and blend together with a fork. I find that this works better if you leave the sugar out for a half hour or so to let it dry out a little ahead of time.
Its a good idea to remove the membrane from the back side of the ribs whether you are using back ribs or side ribs. If you haven't done that before, have a look at this video from BBQ Pit Boys.
Sprinkle both sides of the ribs with the sweet rub and gently press into the meat. Place the ribs in a small roasting pan, cover and bake for 90 minutes.
When the ribs have finished cooking remove them from the oven and prepare your grill to medium high temperature. Finish the ribs off on the grill with your BBQ sauce. Be careful not to burn the sauce, you just want to sear it a little. That's it, serve hot off the grill.
