Oven Baked Wedgie Fries
- 3 medium sized potatoes Idaho or Yukon Gold
- 2 tbsp. olive oil extra light
- 1/2 tsp. paprika
- 1/4 tsp. garlic powder
- 1/4 tsp. kosher salt
Wash the potatoes and pat dry with paper towel. Then slice each potato into wedges approx. 1/2 inch thick at the thick side.
Put the sliced potato wedges in a medium sized mixing bowl and fill with water enough to submerge them completely. Set aside for a minimum of 1 hour.
Preheat oven to 425°F. When the potatoes have finished soaking, drain them and lightly pat dry with paper towel. Add the olive oil and toss to coat them. Then sprinkle in the paprika, garlic powder, and salt and toss the wedges to coat.
Prepare a large baking sheet with cooking spray. Arrange the coated potato wedges on the sheet so that they are separated. Bake the wedges for 15 minutes, turn them over and bake for another 10 minutes or until they are golden brown and fork tender. Serve Immediately with your favorite toppings.
Whether you call them spuds or taters or murphies, tubers or goobers, these wedgie fries taste great and are healthier than french fries.
