Building your own personal size pizzas has never been easier. Forget the $1.50 per topping that your local pizzeria charges, you're in control now. Great for family pizza night because everyone gets to choose their own toppings.
- 2 8" flour tortillas (or 10 inch)
- 1/3 cup pizza or pasta sauce about 6 tbsp. divided
- 3/4 cup shredded mozzarella divided
- toppings of your choice
Preheat oven to 425°F with oven rack in middle position. Place the soft tortillas on a medium sized baking sheet and spread the sauce evenly over the top of each one to about a 1/2 inch from the edge.
Cover the sauce with 1/2 of the shredded mozzarella.
Place your toppings evenly over the cheese. When I made these I used precooked Italian sausage and bacon bits, diced green peppers, and sliced mushrooms.
Top the tortilla pizzas off with the remaining shredded mozzarella.
Bake in preheated oven for 5 to 6 minutes. Remove from oven and let cool a minute or two before slicing. Repeat as required until everyone is pizza'd out.
